Sauvignon Blanc 2017
Vineyards are grown on a South Eastern facing slopes. Soils are made up of clay, gravel and sandstone with efficient drainage. Canopy control is practised to ensure fruit to acid ratios and ensures preservation of pyrozines and tropical notes.
Three separate clones are used to define the final blend, each adding expression and varietal character.
Due to the vineyards experiencing cooler temperatures as a result of higher elevation, minimal irrigation is required and no stress is noticeable during the ripening period.
The grapes benefit from a longer “hanging time” which enhances good structure and lively acidity.
Pinot Noir 2017
The vineyards are selected through a process of the varying soil types. These are Sandstone, Shale and Quartz. These soil types play an important role in the final blending of the wine as the wines are vinified in separate batches according to soil type. French clones underpin the softer tannin structure with the unique Cherry and Strawberry fruit that is classically present in Burgundy.
The yields are kept to a minimum ( 4 Tons per hectare) as this assists in the quality of fruit that is delivered to the cellar.
Grapes are handpicked and sorted in the vineyards.
