Description
Bright colour, with a hint of green, The wine has a nose of guava and fig with intense tropical notes. A mouth filling entry with an abundance of ripe fruit. The addition of a splash of Semillon adds to the complexity and length of the palate. The brisk underlying lemon drop flavours give this wine a mouth-watering finish.
Best enjoyed with cream or butter based dishes such as Mouille Mariniere, lemon-butter basted crayfish or Prawn and Mango Salad.
Harvest commenced on the 06th March at 5am. Temperature 9 °C
Removed 2% rot on sorting tables.
Berry size excellent with intense fig flavours.
Destemming and crushed into Pneumatic press.
After a two day cold settling period the clean juice was racked and fermentation initiated.
Fermentation lasted 20 days at an average temperature between 10 °C until “dry”
Post fermentation included “stirring” of lees for a period of 2 months.
7% Barrel fermented Semillon was blended before bottling to add complexity and mouthfeel.
Bottling took place on the 23rd October 2015.
